China is a major force in the global garlic industry and the world’s largest garlic producer and exporter, accounting for more than 60% of global garlic exports. In terms of provincial distribution, Shandong, Henan, Jiangsu, and Hebei together account for more than half of China’s total garlic-growing area. At the county level, 20 major production counties, cities, and districts each have more than 100,000 mu of garlic cultivation.

Among these regions, Jinxiang in Shandong, Cangshan in Shandong, Pizhou in Jiangsu, and Qi County in Henan are four of China’s most representative garlic-producing areas, each with its own distinctive varieties, production characteristics, and established industry networks.

Jinxiang

Jinxiang County in Jining, Shandong Province, is one of China’s major garlic-producing regions. The Jinxiang production area extends beyond the county itself, covering several surrounding counties and forming one of the country’s most concentrated garlic-growing and trading regions.

Jinxiang is home to China’s largest garlic trading market, and its garlic exports account for more than 70% of China’s total garlic exports. As a major hub for garlic distribution and a key reference point for market pricing, Jinxiang is often described by the saying, “The world looks to China for garlic, and China looks to Jinxiang.”

The region has also developed extensive cold-storage capacity and a large number of garlic processing companies. Over the years, a well-established industry network has formed, covering storage, processing, trading, logistics, and export.

Cangshan

Cangshan, now part of Lanling County in Linyi, Shandong Province, is another well-known garlic-producing region. Cangshan garlic, a specialty of Lanling County (formerly Cangshan County), has a cultivation history of nearly 2,000 years.

Over generations of cultivation, several local garlic types have developed, including the rough-stem, Pu-ke, and high-stem varieties. Among them, the distinctive “Sixteen-Four Clove” garlic, known for its thin skin, delicate aroma, and characteristic clove structure, has become closely associated with Cangshan garlic.

Cangshan garlic is also a nationally recognized geographical indication product. Its distinctive characteristics are closely linked to the region’s specific ecological conditions, together with centuries of natural selection and targeted cultivation.

Pizhou

Pizhou is a major garlic-producing area in Jiangsu Province, with Pizhou White Garlic being one of its best-known varieties.

Pizhou White Garlic is characterized by large bulbs, white skin, crisp cloves, and a moderately pungent flavor. It is widely regarded as a premium variety of white garlic.

In recent years, Pizhou’s garlic industry has expanded beyond cultivation into cold-chain logistics, research and development, and related services, creating a more integrated industry ecosystem. Pizhou garlic is exported to more than 100 countries and regions and has a strong presence in Middle Eastern markets.

Qi County

Qi County Garlic is a specialty of Qi County, Kaifeng, Henan Province, and is recognized as a national agricultural geographical indication product.

The region primarily produces two types of garlic: purple-skinned and white-skinned garlic. Purple-skinned garlic has a slightly purplish outer skin, relatively thick skin, and good storage properties.

Qi County garlic is generally known for its large bulbs, thick skin, firm bulbs that resist separation, good storability, concentrated garlic juice, distinctive aromatic and spicy flavor, and rich nutritional profile.

With a long history of garlic cultivation, Qi County has gradually expanded its industry beyond farming. Similar to major production regions in Shandong and Jiangsu, the local garlic industry now encompasses not only cultivation but also storage, processing, and related supply-chain activities.

The four regions above represent some of the most prominent garlic-producing areas in China, but they are by no means the only important ones. Zhongmu in Henan, Laiwu in Shandong, Daming in Hebei, Dali in Yunnan, and Wenjiang and Pengzhou in Sichuan are also important parts of China’s garlic-producing landscape. Each region has developed its own cultivation characteristics and supporting industry based on local conditions.
